Candied Sweet Potato Cupcakes






I have been MIA for a little bit but I'm back! I'm also back at a great time might I say-just in time for an MS Cupcake Club post. This month Karen from Karen's Cookies, Cakes, & More chose Candied Sweet Potato Cupcakes. I have to say I was really excited to try this recipe because I have never had a dessert with sweet potatoes, but it's so close to pumpkin it made sense to me. At the same time, I was also nervous because others may know something I don't as there are no desserts out there with sweet potatoes. Also, telling people I was bringing sweet potato cupcakes to a get together got me a couple confused and worried looks.

Every month at least a couple members of the club complain that the recipe was a muffin desguised as a cupcake. So this month, I will be one of those members. As delicious as they were...they were muffins. To prove they were muffins, I made some in a muffin pan and had them the next day and they were great!! These are way to dense to me cupcakes. I also did not like the marshmallow topping. It was a sticky disaster to work with and the taste was just 'eh'. So my verdict is if you are looking for a muffin recipe for the holiday season this good one but for cupcakes...I don't know!

  5. Well these look perfect! Glad you make these - I felt strange about adding sweet potatoes, but they came out wonderfully! More like a muffin - surprisingly good. The topping looks fantastic - nicely done!

  7. It seems the muffin/cupcake dilemma comes up every a lot with this cookbook. I honestly don't care what you call them as long as they taste yummy. I also was not 100% impressed with the topping although I did enjoy the cupcake/muffin. :) Great job!

  8. I'm with you on the muffin/cupcake dilemma. I may just try the recipe and call them muffins and see what I think then.

    ...oh wait, or I'll just stick with a muffin recipe that doesn't require me to roast and mash a sweet potato first.

  9. Love your photos! They look great - sorry they didn't quite do it for you. I thought the marshmallows were good but I think they would be equally delicious with a cream cheese frosting!

  10. Fun photos! I completely agree that these are seem more like muffins than cupcakes. If it weren't for the marshmallows, they would be perfect for a breakfast brunch. I had a tough time with the marshmallows, too. How was I supposed to stack something that wants to roll away? Thanks for sharing!

  11. I love the shot of your cupcake where you cut it in half. You can see how moist that they are. In my post I posted that I felt that they were very cupcake like, but that was after I ate them warm out of the oven. When I ate them the next day they definitely were more muffin like. I guess I should wait awhile before I post next time!
